Maple Cheesecake Lollipops

This recipe is great for a party as it will make approximately five dozen two-bite desserts.

40 ounces cream cheese

10 ounces sour cream

20 ounces sugar

2 tsp. nutmeg

2 1/2 ounces cornstarch or flour

5 eggs

15 ounces maple syrup

Chopped candied walnuts

Lollipop sticks or skewers

Cream cream cheese and sour cream until smooth. Mix together sugar, nutmeg and cornstarch (or flour) and add to cream cheese. Mix until combined. Add eggs one at a time, incorporate before adding the next. Drizzle in maple syrup and combine all.

Bake in unlined 1/2 sheet tray at 300 degrees until set, about 18-20 minutes.

Cool, then freeze until solid. Scoop with truffle scoop or a small ice cream scoop. Roll in candied walnuts. Spear each with a lollipop stick or skewer. Keep in freezer until ready to serve.

Goat Cheese Crostini with Spanish Dry-Cured Chorizo and Marinated Sun-Dried Tomatoes

This is a recipe for preparing 6 medium-sized baguette toasts.

4 ounces Chevre goat cheese

2 Tbsp. lemon aioli (you can make with mayonnaise and lemon juice)

Pinch chopped herbs (chives, thyme, parsley, chervil)

Salt and cracked black pepper, to taste

Chorizo, sliced

Jar of sun-dried tomatoes in olive oil

Sourdough baguette

Garlic oil

Arugula, chiffonade, for garnish

Mix together goat cheese, lemon aioli, herbs, salt and pepper.

Brush sliced bread with garlic oil, season with salt and pepper, then bake in 350 degree oven for 10-15 minutes or until golden.

Before your guests arrive, spread the goat cheese mix on the crostini. Top with sun-dried tomatoes and a slice of chorizo. Warm in a 375 degree oven for about 5-7 minutes. Put the toasts on a platter and garnish with a chiffonade of arugula.
